Tallow is rendered animal fat, primarily from cattle or sheep. It has been traditionally used for frying, soap making, and food processing. McDonald's famously used beef tallow for frying french fries until 1990. Lard is the pork equivalent and is always haram. Even beef tallow must come from halal-slaughtered animals to be permissible.
